Fig and Cheese Kernza Naan Pizzas

This recipe is a favorite of Gwen Willians of Artisan Naan Bakery in St. Cloud, Minnesota. The slightly nutty flavor of their Kernza® naan is the perfect way to present the slightly sweet taste of the roasted goat cheese and figs. This naan is a flatbread that incorporates Kernza, a perennial grain, with King Arthur wheat flour to create a unique taste.

Ingredients
  

  • 2 Kernza Naan
  • 80 grams dried figs approx. 7 to 10 dried figs
  • 50 grams goat cheese
  • 50 grams shredded mozzarella

Instructions
 

  • Slice the figs in half. We have used golden dried figs and black dried figs: use your favorite.
  • Crumble the goat cheese.
  • Layer toppings on a Kernza Naan. We put the crumbled goat cheese first, then figs, then mozzarella.
  • Bake or grill until the mozzarella cheese has melted.

Artisan Naan debuted their perennial grain breads in the summer of 2021. These Kernza flatbread recipes have enjoyed a steadily growing audience, but there are still a lot of people who don’t know what makes these breads special. “It’s hard to educate people in the grocery store when you’re not there to do demos and talk with them. The nuttiness of the flour is really something unique,” said Gwen.
