Chicken Kabobs

Laura Thompson of Thompson Family Farm shared a recipe for one of her and her husband's favorite summer dishes--kabobs. This recipe works perfectly with pork as well!

Ingredients
  

Marinade

  • 1/4 cup olive oil
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Kabobs

  • 1 pound chicken breasts
  • 3 bell peppers
  • 2 medium zucchini
  • 3 onions
  • wooden skewers

Instructions
 

  • Soak wooden skewers in water for 20 minutes before assembling and grilling. This prevents the wood from scorching.
  • Mix all marinade ingredients in a large bowl. Cut chicken into one inch cubes and place in marinade. Cover bowl and place in refrigerator for 30-60 minutes.
  • Cut all your veggies to fit on the skewers. Add to marinade.
  • Assemble kabobs on skewers as desired. Cook on medium-high heat on the grill for six minutes per side. Enjoy!
