Chicken Kabobs
Laura Thompson of Thompson Family Farm shared a recipe for one of her and her husband's favorite summer dishes--kabobs. This recipe works perfectly with pork as well!
Ingredients
Marinade
- 1/4 cup olive oil
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/2 tsp pepper
Kabobs
- 1 pound chicken breasts
- 3 bell peppers
- 2 medium zucchini
- 3 onions
- wooden skewers
Instructions
- Soak wooden skewers in water for 20 minutes before assembling and grilling. This prevents the wood from scorching.
- Mix all marinade ingredients in a large bowl. Cut chicken into one inch cubes and place in marinade. Cover bowl and place in refrigerator for 30-60 minutes.
- Cut all your veggies to fit on the skewers. Add to marinade.
- Assemble kabobs on skewers as desired. Cook on medium-high heat on the grill for six minutes per side. Enjoy!
