Sliced Flat Iron Steak Appetizer

This teaser is a scrumptious bite of local goodness. Perfect way to set the stage while you're getting the rest of your meal ready.

Ingredients
  

  • Flat iron steak
  • Salt, pepper, garlic powder (or your favorite steak rub) (I used Baptism River Barbecue's Two Step Falls Beef Rub on air.)
  • 1 tbsp olive oil or tallow
  • 1 bag of ruffle cut potato chips
  • Coleslaw homemade, store bought, whatever your favorite is!

Instructions
 

  • Season steak generously with salt, pepper, and garlic powder or steak rub. Let rest at room temp ~30 minutes.
  • Sear or grill over high heat.
  • Cook to medium-rare to medium.
  • Rest 5–10 minutes before slicing.
  • Slice thinly against the grain.
  • Top each chip with a teaspoon of coleslaw and top with a strip of flat iron.

Notes

For the coleslaw on Minnesota Live, I mixed a broccoli slaw mix with Northland Vinegars apple cider vinegar, olive oil, dried mustard, brown sugar, and salt. For a creamier slaw, combine Baptism River Barbecue's Baptism River sauce with mayo for a delightful tang.
I used Old Dutch Ruffled potato chips for the segment.
