There are over 120 registered Minnesota Grown CSA farms statewide with more than 450 pick up sites to connect with locally-raised produce, meat, and cheese.

These are a few of the farms included in my winter 2024 @edible_minnesota feature on MN CSAs.
@theblackradish_ is an urban farm that consists of a dozen converted yards. Member pick-up is unique. Each receives a large tote bag and chooses their own produce.
@companionbreads Owner Bryce Johnson spent three months studying artisanal bread and community ovens in Europe. 6-week subscriptions range from breakfast, whole grain and heritage grain breads.
@earthtanicsb members enjoy a monthly share which includes a yeasted loaf of bread, cookies, and a seasonal bake. Special order offerings available in addition to CSB shares.
@featherstonefarmmn offers certified organic vegetable shares with an egg add-on available. Spring, summer and winter shares are available with an extensive drop site network.
@greenearthgrowers is a Certified Naturally Grown program that started as a wholesale greenhouse plant business. Members choose from full or half fresh flower or vegetable shares.
Heather’s Home Goods creates pop up boxes that make the most of Embarrass’s 71-day growing season. Boxes are a combination of fresh produce and cottage producer goods.
@honeydewfieldsmn is a regenerative agriculture farm that gardens to replenish soil health. Their fresh summer flower bouquet ‘Fresh from the Field Club’ comes in weekly and bi-weekly subscription options.
@nightowlfarmmn Shares are delivered in thrifted baskets with thrifted fabric liners. Vegetable and flower CSAs.
@tcfarmmn is a network of regional farms providing customers with “the very best meat, veggies, and dairy.” Home delivery to St. Cloud, Rochester & Twin Cities metro.
Trumpeter Swan Farm a year-round CSA program offering full and half shares of veggies, eggs, and storage crops.

“Love on a Plate…” is Ruhland Strudel Haus’s slogan. This passion project has become a growing business for Eagan’s Tom Ruhland and his family. Everyone involved literally brings something to the table thanks to the positive energy and creativity that makes this strudel business possible.
Tom’s inspiration is his love of people. Food is his love language: “Making food for somebody is a very intimate action and an expression of love. That may sound a little poetic for a food maker, but that’s what drives me.”
Apple was the original strudel, and is still Tom’s favorite. He sources much of his produce locally, especially vendors from the @stpaulfarmersmarket . Tom’s son Noah, who leads the kitchen, roasts every vegetable and braises every cut of meat himself.
The Strudel Haus menu boasts over 50 varieties, both sweet and savory. The menu has year round staples and seasonal flavors. Tom credits his son Noah with the consistent high quality and diverse flavor palate of their offerings. “Noah is the creator. He dreams the strudels first and then makes his dream a reality.”
Free delivery with a $75 minimum purchase every Wednesday within a 30 mile radius of St. Paul. Curbside pickup available Tuesday and Thursday at St. Paul production facility. Purchase at @ferndalemarket , @jerrys_foods , and Seasoned Specialty Foods on Grand Ave.
The roasted vegetable with white bean and the salmon duxelles are my personal favorites. These are rivaled by one of Ruhland’s recent menu additions—Apple Cider Braised Pork with Sweet and Sour Cabbage and Bacon. It’s SO good.

Ruhland’s Strudel Haus will be one of the three Minnesota Makers participating in the April 20 Taste Maker class at the Farm at the Arb Minnesota Landscape Arboretum. Class participants will learn about Tom’s apple strudel origin story and sample his handcrafted strudels.

What does it take to make a bakery gluten free and celiac safe?
Jenny Casper of Eagan’s Fiddlesticks Bakery shuttered her first cottage bakery after a family medical diagnosis.
“I’ve always liked making things. It feels good to make food and please someone. I missed that feeling enough that I wanted to try again,” shared Jenny.
Jenny has found two joys in her bakery.
The first is the process of perfecting a new recipe. “It feels so good when I’ve been struggling with a recipe to finally nail it. That’s happening more now as I learn how gluten free baking works,” explained Jenny. “Facing that challenge and winning by making something wholesome, tasty and satisfying feels like such a win.”
The second joy is connecting with customers. “It feels good to help people still welcome their loved ones with special treats. I started with cinnamon rolls when I relaunched because that’s what many people who need gluten free missed.”
Fiddlesticks Bakery will be one of the three Minnesota Makers participating in the April 20 Taste Maker class at the Farm at the Arb Minnesota Landscape Arboretum. Class participants will sample Jenny’s signature gluten free cinnamon rolls and learn about her journey into celiac safe baking.

Don’t put your Crockpot away just yet!
Eagan food blogger Jenna Gorman has lots of fresh flavors perfect for spring that take advantage of the low, slow heat of the Crockpot.
For her Sun ThisWeek feature, Jenna shared her Crockpot Chicken Gyros with Homemade Tzatziki Dressing.
Jenna’s go-to meal is any dish that involves her crock pot because it’s just so easy. “I work hard to show people that you can use your crock pot as a base. Take that base to create a meal that is fresh—the opposite of the heavy, soggy meals that some people associate with slow cooking and crock pots.”
This recipe can be weeknight friendly or weekend fancy. Everyone will enjoy choosing their own toppings.
What do you need?

Have you made your summer CSA plans yet?
Your local farmers and producers are already planning their seasons. They’ve ordered seeds, high tunnels are loaded with baby plants.
Your support makes the difference in their ability to provide a more sustainable product.
Sustainable doesn’t mean organic—though it can.
Sustainable here means locally sourced, short transportation, minimal soil disruption, animals that live outdoors, and eating with Minnesota’s seasons.
In the winter issue of @edible_minnesota , I shared what it means to be a farm that follows the CSA model and how these farms build communities. This is local supply chains in action.
“The CSA model allows us to build a more sustainable business model for @tcfarmmn and all of our partners,” explained Jack McCann. “With a CSA we can make it possible for the farmers to thrive and the consumers to trust their purchases.”
Community Supported Agriculture (CSA) farms and businesses are real life examples of individuals collaborating at the local level to support the common good and build thriving communities. Through the CSA model a farm becomes the community’s farm.
As digital technology eliminates the physical borders that divide us and mechanical technology makes megafarms possible, CSAs connect consumers and food producers at the local level. The USDA defines a CSA as a “farm operation that becomes, either legally or spiritually, the community’s farm.”
In return for their investment, the consumer receives a share of the farm’s products on a weekly, every other week, or monthly basis. This share integrates them into a community of similarly-focused individuals.

Who isn’t inspired by spring bunnies nibbling on

Who isn’t inspired by spring bunnies nibbling on carrots?
Maybe you’re just looking for a treat to keep up your energy while waiting for the eclipse or watching March Madness?
These muffins pack in extra fruits, veggies and fiber for a great on-the-go spring breakfast.
Spring morning muffins
2 cups shredded carrots (about 4)
1 apple, shredded
1 stick butter (or vegan butter), melted
3 eggs (substitute flax eggs for vegan version)
1 tsp vanilla
2 cups flour
½ cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
Pinch of salt
1 cup mixed dried fruits, nuts and unsweetened coconut (pick your favorites!) Dried cherries, golden raisins, walnuts are a nice mix.
Mix together butter, sugar, eggs, vanilla. Add in dry ingredients. Mix to combine.
Gently fold in shredded carrots and apple, and dried fruits and nuts.
Scoop into 12 greased muffin cups.
Bake at 375 degrees Fahrenheit for 25-30 minutes.
Serve warm with butter or cool and add cream cheese frosting to turn these into healthier cupcakes.
I plan to try this recipe with the last of our @featherstonefarmmn CSA carrots from our winter CSA!
